Mark Hinshaw, a chef for over 27 years, started his food career when
his brother opened Caruso's, a small family Italian restaurant, back in
the late seventies.  Since that time, Mark has spent his life learning
about, preparing, perfecting and loving food from around the globe.  

Upon moving to Austin in 1982, Mark began working at Clarksville Café,
a sister restaurant of the famous Jeffrey's. Other early experiences
included preparing garden fresh vegetarian fare at Carla's and developing menus as the
Kitchen Manager at Treaty Oak Café.

His fifteen years at Castle Hill Café working closely with executive chef/owner, David Dailey,
helped to hone his skills and diversify his menus.  Mark has also worked as a captain and
chef for Max's Catering, Liberty Catering and Affair to Remember Catering.  These
experiences led him to develop his own catering company, Dharmachow, which provided
extensive services for Austin Shambhala Center as well as for many other happy clients.

The opportunity for Mark to join forces with Michael Guidry and expand their catering
expertise together has proved to be a fruitful and productive venture.  They each bring a
broad range of food knowledge, a great love of cooking and a strong enthusiasm for creating
a wonderful experience for their clients.

Michael Guidry, a 17-year veteran to the culinary arts profession, prides

Chef Guidry's professional experience ranges from general management and Sous Chef
roles at Austin's long-beloved Castle Hill Café to banquet coordination and special event
planning for hundreds at the downtown Doubletree Hotel.  As a lifelong "foodie," Michael has
acquired a superior knowledge of ideal food pairings, appropriate wines, and seasonal menu
options.  His fun-loving, gracious personality make him a joy to work with as you collaborate
